Ingredients:
- 200 g rice noodles
- 150 g tofu
- 2 tbsp tamari (or soy sauce )
- 1 tbsp peanut butter
- 1 tsp coconut oil
- 1 clove garlic
- 1 tsp fresh ginger (grated)
- 2 tbsp lime juice
- 100 g mung bean sprouts
- Fresh cilantro leaves
- Peanuts for garnish
Instructions:
- Cook rice noodles according to package instructions and set aside.
- Cut the tofu into cubes and fry in coconut oil until golden.
- Add garlic, ginger, and tamari, stir and cook for 2 minutes.
- Stir in peanut butter and lime juice.
- Add the cooked noodles and mung bean sprouts, mixing everything well.
- Serve with fresh cilantro and crushed peanuts on top.
